A Cortado Story

The Cortado originated in the Basque region of Spain in the early 20th century, where it was known as "Café con Leche Pequeño" or "small coffee with milk." In its original form, the cortado was made with a single shot of espresso and an equal amount of steamed milk (and that is how we make it here at Beard Beard Brothers).

On the menu today: Ratatouille
Compliments of our in-house chef-in-training: Sam Beard.

Farm fresh Eggplant, zucchini and tomatoes with an herbed roasted pepper and tomato purée with thyme, rosemary chives and parsley w/Side of rice.

It originated in France though the ingredients and style of preparation has some historians wondering if it actually originated from the Basque region of Spain. The traditional recipe calls for tomatoes, eggplant, zucchini, peppers and onions. According to the Provencal tradition, herbs de Provence were the only official blend of spices that could be used as they were traditionally grown in the region making it Ratatouille Nicoise. These included: rosemary, oregano, basil, thyme, serpolet (wild Thyme), savory and sometimes lavender.

It is said that Provencal Chefs would scorn any who dared call their dish Ratatouille Niçoise if it was prepared with herbs other than these.

Traditionally Ratatouille was considered peasant food owing to its preparation style of “rough cut” vegetables and the economy of a dish that could be eaten with cheap rice, pasta or dipped into with chunks of bread.

Further history is shown out within the cartoon with allusions to the struggle of various peoples with Assimilation as often those outcast are given less pleasant jobs and depicted by less pleasant creatures.
